Kale Apple Salad with Almonds

INGREDIENTS

1 cup water
1/2 cup dry red quinoa
1/4 cup apple cider vinegar
1 tablespoons honey
1/4 cup extra virgin olive oil
4-5 cups chopped kale
10 oz bag of Prize Slice Tart Apple Slices
2 tablespoons of sliced almonds

DIRECTIONS

Combine 1 cup of water with the dry quinoa in a saucepan and bring it to a boil over medium high heat. Cover the saucepan and reduce the heat to low, let it simmer for about 15 minutes until the quinoa is tender.
In a small bowl combine apple cider vinegar with honey and whisk in olive oil. Set aside.
Add cooked quinoa, chopped kale and green apples to a large bowl and toss with apple cider dressing. Plate the mixed salad and sprinkle with sliced almonds. Serve immediately.
